Fresh Tomato Sauce
Makes just over a liter
Ingredients:
1 onion, chopped
1 teaspoon oil
2 garlic cloves, finely chopped
2 carrots, chopped
10 dates, chopped
20 tomatoes (1.5kg), chopped
1 tablespoon salt
4 tablespoon fresh herbs (rosemary, thyme, marjoram, sage)
2 teaspoons paprika powder
1/8 teaspoon cayenne powder (optional)
1/2 teaspoon turmeric powder
Method:
- Fry onion in a pot with oil until glossy. 
- Add garlic and fry 1 minute 
- Add carrots and dates and fry another few minutes on medium heat 
- Add tomatoes and let simmer with lid for about 20 minutes. If you let it simmer longer it will get thicker and a stronger tomato taste. Especially if you let simmer further without a lid. 
- Finally add the rest of the ingredients (herbs, spices) and simmer for another 5 minuets or until thoroughly cooked. 
- Either serve as is, or blend into fine sauce. 
Very nice with pasta, potatoes, cooked grains or for pizza
