Beetroot Soup
Serves 4
Cooking time: 1 hour
Ingredients:
500g beetroots
2 onions, peel and chop
3 cups water
1-2 tablespoons lemon juice
1 teaspoon herbal salt
4 tablespoons chives, chopped
Method:
Let the beetroots simmer 30-40 minutes in salt water.
Peel the beetroots, and cube.
In a pot with some water fry the onions and the beetroot.
Cover with the water and cook covered for 10 minutes.
Puree the soup adding lemon juice and salt.
