Millet-Spinach Dish


Millet-Spinach Dish

Serves 4

Ingredients:

1 cup millet, rinsed

2 cups water

1 teaspoon curry

500g spinach leaves

2 garlic cloves, crushed

Sauce

1 cup water

3 tablespoons sunflower seeds, ground

1½ tablespoons nutritional yeast flakes

1 tablespoon flour

1 teaspoon salt

½ teaspoon nutmeg

Method:

  1. Cook millet with water and curry 20-30 minutes

  2. Cook spinach for 10 minutes in salt water, drain and rinse

  3. Layer half of the millet, then the spinach and garlic, ending with the rest of the millet in oiled baking dish

  4. Pour over the savory sauce

  5. Bake at 175 °C about 30 minutes

  6. Enjoy with some fresh salad
