Citrus-Date Triangles
An elegant dessert with a smooth, thick, sweet date filling surrounded by a crunchy, crust.
Citrus-Date Triangles
Makes 18 triangles
Ingredients:
Crust
1 cup nuts, chopped (of choice, i used almonds and pecan nuts)
½ cup oats, flour
¼ teaspoon cinnamon
2 tablespoons water
Filling
1 cup pitted dates, chopped
6 tablespoons lemon/orange juice
¼-1/2 teaspoon zest from organic orange or lemon
Method:
Soak the filling ingredients for an hour, then puree till creamy
In separate container mix all the crust ingredients together.
Now use half of the crust and place in the bottom of the container, place filling in the middle and cover with the rest of the crust.
Place in fridge for a 30-60 minutes, then cut into triangles.
Enjoy.
Variation:
Instead of dates used dried apricots, apples, pears, pineapples, figs or peaches. Soak for 4 hours.
