Fresh Tomato Sauce

Fresh Tomato Sauce

Makes just over a liter

Ingredients:

1 onion, chopped

1 teaspoon oil

2 garlic cloves, finely chopped

2 carrots, chopped

10 dates, chopped

20 tomatoes (1.5kg), chopped

1 tablespoon salt

4 tablespoon fresh herbs (rosemary, thyme, marjoram, sage)

2 teaspoons paprika powder

1/8 teaspoon cayenne powder (optional)

1/2 teaspoon turmeric powder

Method:

  1. Fry onion in a pot with oil until glossy.

  2. Add garlic and fry 1 minute

  3. Add carrots and dates and fry another few minutes on medium heat

  4. Add tomatoes and let simmer with lid for about 20 minutes. If you let it simmer longer it will get thicker and a stronger tomato taste. Especially if you let simmer further without a lid.

  5. Finally add the rest of the ingredients (herbs, spices) and simmer for another 5 minuets or until thoroughly cooked.

  6. Either serve as is, or blend into fine sauce.

Very nice with pasta, potatoes, cooked grains or for pizza
