Creole Beans and Rice

Creole Beans and Rice

Serves 5

Ingredients:

1 1/2 cups kidney beans, dry

1 1/2 cups white beans, dry

1 onion, chopped

1 garlic clove, chopped

2 tablespoons marjoram, chopped

1 bay leaf

2 tablespoons salt

2 cups tomatoes, diced (350g)

1 cup brown rice

2 cups water

1 sweet pepper, chopped

2 celery stalks, chopped

Method:

  1. Soak beans in water overnight

  2. Fry onions and garlic with water

  3. Rinse beans

  4. Add beans, marjoram, bay leaf to pot, and cover with water

  5. Cook at medium heat with lid for about 1h30, if necessary add more water. But make sure the beans are soft

  6. Add salt, tomatoes and rice

  7. Cook for further 25-30 minutes

  8. Add pepper, and celery

  9. Let simmer for 15-20 minutes

  10. Enjoy

Tip:

Look at rice cooking instructions, and adjust the cooking time
