Lebkuchen

Makes about 22 rectangles

Ingredients:

Dough

1 cup dates, chopped

1 cup raisins

1½ cups water

½ cup sweet molasses

pinch of salt

½ teaspoon vanilla essence

2 teaspoons cinnamon powder

1 teaspoon ginger powder

¾ teaspoons nutmeg powder

¾ teaspoon clove powder

1 cup almonds, chopped

4 cups whole wheat flour

2 tsp baking powder

Chocolate coating

½ cup coconut oil (melted)

½ cup cocoa powder

¼ cup honey

Method

  1. Mix all the dough ingredients together

  2. Flatten the dough out on a large tray (about 40x40cm)

  3. Bake at 180°C 20-30 minutes.

  4. Cut into rectangles, let cool

  5. In the meantime blend all the chocolate ingredients till smooth.

  6. Once the Lebkuchen have cooled down, coat with a layer of chocolate.

  7. Enjoy :)

Tip:

Make sure the chocolate stays liquid (warm). If the coconut oil gets cold it hardens and it will be tricky to coat the base.
