Lentil-curry with Cauliflower

Lentil-curry with Cauliflower

serves 4

preparation time 40 minutes

Ingredients:

1 onion, sliced

5 potatoes, cubed (450g)

1 cup red lentils, rinsed

1-2 tablespoons curry powder

3 cups water

1 tablespoon salt

1 garlic clove, crushed

1/2 teaspoon cumin seed, ground

6 dates, finely chopped

1/2 cup cashews, chopped

1 teaspoon oil

1/3 cup coconut flakes

Fresh peppermint leaves, finely chopped

Fresh parsley twigs, finely chopped

Method:

  1. Fry onion, potatoes, lentils with a sip of water

  2. Stir in curry powder

  3. Add water, cauliflower florets, salt, garlic, cumin and dates

  4. Simmer with lid on for 15-20 minutes

  5. In the meantime fry cashews in oil till brownish, stirring continuously, they burn easily

  6. Add coconut flakes and switch off heat

  7. Serve cauliflower curry with fried cashews and herbs. Enjoy

Tip:

Cut cauliflower stem into small pieces and cook with potatoes.
