Lentil-Apple Stew


Lentil-Apple Stew

Ingredients:

2 cups dry lentils (soak overnight)

6 cups water

7 bay leaves

7 sage leaves, finely chopped

7 potatoes, cubed

7 tomatoes, cubed

7 apples, cubed

2 tablespoons salt

Chives, finely sliced

Cream

3 tablespoons sunflower seeds, ground

1 teaspoon salt

1 cup water

2 tablespoons nutritional yeast flakes

Method:

  1. Soak lentils overnight and then rinse

  2. Cook lentils with 6 cups water, bay leaves and sage leaves for 20 minutes

  3. Add potatoes, tomatoes and apples to the lentils cook for further 10 minutes

  4. In the meantime blend the cream ingredients together into creamy sauce

  5. Serve lentils with chives and cream sauce
