Apricot-Lentil soup

Ingredients:

1 onion, diced

1 liter water

1 cup red lentils, rinsed

½ teaspoon ginger powder

½ teaspoon nutmeg powder

½ teaspoon cinnamon powder

½ teaspoon coriander powder

½ teaspoon cardamon powder

1 lemon (organic), skin grated off, plus squeezed out juice

8 apricots, diced

3 teaspoons salt

2 tablespoons savory cream

1/4 cup parsley leaves, finely chopped

2 tablespoons honey

Method:

  1. Fry onions with a sip of water

  2. Add water and bring to boil

  3. Add lentils and spices (ginger, nutmeg, cinnamon, coriander, cardamon), let cook for about 15 minutes at low heat

  4. Blend till creamy

  5. Mix in the rest of the ingredients into the soup

  6. Enjoy, very nice with pita bread
