Oat-dumplings with Carrots

Serves 4

Ingredients:

Dumplings

600g potatoes, cooked, peeled and grated

½ cup rolled oats

2 tablespoons parsley, finely chopped

½ cup oat flour

3 tablespoons linseed ground and soaked in 9 tablespoons water

1 teaspoon salt

½ teaspoon nutmeg

2 liters of water with 2 tablespoons salt for cooking

Carrots

500g carrots, grated

¼ cup water

½ teaspoon salt

parsley for garnish

Method:

  1. Mix the dumpling ingredients together

  2. Form 12-16 dumplings

  3. Cook in salted water till the float in the water, about 20 minutes

  4. In the meantime fry the carrots with water and salt in another pan

  5. Serve the dumplings with carrots, sprinkling some parsley on top
