Very easy, quick to make, delicious pasta dish.
Pasta with Sweet-Potato-Pecan-Pesto
Serves 4
Ingredients:
500g sweet potatoes, peeled and cubed
1 cup water
1 teaspoon lemon zest
1 garlic clove, finely chopped
2 teaspoon salt
1/4 cup pecan nuts, chopped
1/2 cup basil leaves, chopped
350g pasta (shell form)
Method:
Cook the sweet potato in the water for about 10 minutes.
Add the lemon zest, garlic and salt and mash.
Cook the pasta according to packet instructions.
Serve the pasta with sweet potato mash and sprinkle with pecan nuts and basil leaves.
