Healthy Snickers Pie

Ingredients:

Crust

5 tablespoons cocoa powder

1/3 cup dates

1/8 teaspoon salt

1 cup nuts

1 cup coconut desiccant

1 teaspoon vanilla extract

Caramel layer

1/4 cup dates

3 teaspoons coconut oil

2 teaspoons vanilla extract

1/4 cup almonds

1/4 cup water

Mouse

1 can coconut cream (400ml)

3/4 cup peanut butter

2 tablespoons honey

Chocolate

4 tablespoons coconut oil, melted

2 tablespoons honey

4 tablespoons cocoa powder

Method:

  1. Blend all the crust ingredients together till fine.

  2. Place in form which is covered in wax paper, freeze till it hardens.

  3. Blend all the caramel layer ingredients together.

  4. Spread on the hardened crust, freeze again, till this layer hardens.

  5. Mix the mouse ingredients together till creamy then pour on the caramel layer.

  6. Place in freezer overnight.

  7. Blend the chocolate ingredients together and decorate the pie with the chocolate.

  8. Can either be served then, or placed back into freezer.

Tip:

Take the pie out an hour or so before serving to defrost it slightly.
