Chickpea Chunkies

Vegan meat ball substitute.

Ingredients:

1 cup chickpeas, rinsed and drained

⅓ cup cashews, chopped

2 tablespoons nutritional yeast flakes

½ teaspoon garlic powder

½ cup onions, chopped and sauteed

3 garlic cloves

1 tablespoon linseed, ground and soaked in 3 tablespoons of water

2 teaspoons Italian seasoning (basil, oregano, rosemary, thyme)

¼ cup parsley, chopped

½ cup bread crumbs

1 tomato, chopped

1½ teaspoon salt

Method:

  1. Blend chickpeas into course meal.

  2. Add in rest of the ingredients, and thoroughly blend.

  3. Form into balls

  4. Bake at 200°C for 15 minutes.

Tip:

Serve with some fresh sauce of liking, for example tomato sauce.
